
One of my favorite types of meals to cook is one that doesn’t include cleaning a million dishes afterward. One Pan Pesto & Goat Cheese Salmon with Potatoes and Tomatoes is a fave weeknight meal of mine for this reason.
There are basically three main steps to this recipe: cut everything in half, sprinkle with salt and pepper, and slather some pesto and sprinkle some goat cheese in the middle of the salmon before you stick it in the oven for 35 minutes.
This recipe is no fuss to its core.

What Ingredients Do I Need to Make One Pan Pesto & Goat Cheese Salmon with Potatoes and Tomatoes?
You only need are 8 ingredients:
- 1 pound of salmon
- 3 tablespoons of pesto sauce
- 1.5 ounces of goat cheese
- 1.5 pounds of one bite or fingerling potatoes (see below for alternative options)
- 1 pint of cherry tomatoes
- olive oil
- Salt
- Pepper

How Do I Make One Pan Pesto & Goat Cheese Salmon with Potatoes and Tomatoes?
- Prep: Line a baking sheet with foil. Rinse and dry potatoes, cherry tomatoes and salmon. Preheat the oven to 400 degrees.
- Cut produce: Slice potatoes and cherry tomatoes in half, set aside
- Prep salmon: Slice salmon into 3-4 equal pieces. Then, slice each piece in half horizontally ¾ of the way down the filet. Open the filet and use a butter knife or spoon to spread pesto on the bottom half of the filet then top with goat cheese.
- Place salmon and produce on pan: Place salmon down the center of the pan at a slight diagonal, allowing about 1-1 ½ inches between each piece of fish. Place potatoes on one side of the pan and cherry tomatoes on the other half. Drizzle tomatoes, salmon and potatoes with olive oil, then sprinkle everything with salt and pepper. Mix to ensure seasoning is evenly distributed.
- Cook: Bake in the oven for about 30-35 minutes until potatoes are tender and fish is cooked to your liking and serve!
What Kind of Salmon Do I Need For This Recipe?

The best salmon to use for this recipe are thick salmon filets from the middle of the fish. Filets from the end of the fish will be too thin to cut in half and stuff.
What Are The Best Potatoes To Use In This Recipe?
I like using one bite or fingerling potatoes in this recipe, just on personal preference. But, you can also use:
- Small red potatoes (cut in half)
- Peeled sweet potatoes (chopped up into 1 inch by 1 inch pieces)
- Yukon gold potatoes (chopped up into 1 inch by 1 inch pieces)
- Peeled russet potatoes (chopped up into 1 inch by 1 inch pieces)

Notes
Cook times account for salmon to be well done. If you would like your salmon more rare, remove from oven after 30 minutes.
